
I know Taco Tuesday is a thing, but Thursdays are just as good a day as any to make these, in fact, we pull this quick meal together any day of the week!
When you are in a pinch, a tortilla, some fried fish (I like a cod, but any white fish should work), shredded red cabbage, onion, and cilantro, does the trick! Of course topping it with some hot sauce can never hurt! And for those picky eaters at your table, all of you parents out there know what I mean, just load up the tortilla with veggies and top it with some sour cream, it beats making an alternative meal, am I right?
When you have a bit more time, however, add some of these sides to round out the dish:
Fried beans – just pick your favorite spices, I always default to my go-to-mix of salt and pepper, Aleppo flakes, garlic powder, maybe a little cumin or chili spice and paprika, and fry until the liquid from the beans evaporates.
My favorite guacamole- mash an avocado, add finely chopped red onion and fresh jalapeño pepper, cilantro, quartered cherry, tomatoes, salt, pepper, some crushed garlic, and lemon juice.
And a side of oven roasted crispy potatoes – again, just add your favorite spices! I keep it super simple – salt and pepper, red pepper flakes, paprika some garlic powder. Drizzle with olive oil and oven roast until the potato is easily pierced with a knife, around 20-25 minutes.
