I can’t believe once upon a time I thought making tiramisu was complicated! I clearly didn’t do my research, which is weird, because I love trying out new recipes, and my family LOVES this dessert! It is so, SO simple, fast, requires just a handful of ingredients, most of which are already in your pantry, and so customizable – it’s a perfect balance between cooking and baking. You can edit/ reduce and add-on to taste as you go, without sacrificing the result in the end. It’s low effort and high on reward, you are 15 minutes away from the most creamy, airy and a spongy delight. It was made for Valentine’s Day!
What you’ll need:
Prep time: 15 min
Rest time: 1-2 hours (overnight is best)
- 5 egg yokes + 1/4 cup sugar
- 1 cup mascarpone cheese
- 1- 1 1/3 cup whipping cream + 1/3 cup confection sugar
- 1 -2 packs lady finger cookies
- 4-6 (or more) cups espresso or strongly brewed coffee
- Cocoa for dusting
- Optional: Marsala wine or dark run, brandy or any flavored liquors (i.e: coffee/almond/hazelnut liquor)
Cream preparation:
Beat egg yokes and sugar together until the mixture has thickened, sugar grains disappeared, and the cream is light in color. Add about a cup of mascarpone cream, blend in, and set aside.
In a separate bowl, whip the whipping cream with confection sugar until stiff peaks. Combine the two creams together.
Make espresso! Pour the coffee in a wide shallow soup bowl for soaking lady fingers.
Assembly:
Cover the bottom of a square/rectangular high sides container with a bit of cream. Soak ladyfingers in coffee and lay them out in an even layer. Cover the first layer with cream. Repeat the process for another 1-2 layers, depending on how tall you would like your cake to be. I liked a 3 layer stack!
Let the cake rest for at least a couple of hours in the fridge, if you can wait that long (but if you can’t, eat right away and ENJOY!!) If you do let it soak over night though, you will be in desert heaven!

Notes – play with proportion:
My sugar proportion is a bit of a lower side. If you like it a little sweeter add a bit more sugar to the creams. Try as you go, though, start with less and add as needed to taste!
Soak just one side of ladyfinger if you don’t like too much coffee, similarly, if you like more coffee, pour more coffee on each lady finger layer before covering the layer with cream!
