Overnight Oats- travel edition!

On our trip to New Orleans, we took a drive to see Louisiana’s Capital – Baton Rouge. Given it was lunch time, Konstantin took to Yelp, and not long after we were sitting down at the Solera Spanish Tapas and Bar with cocktails in hand, and a virgin mocktail for one of us, not telling which one!

What I love most about travel is the memories and flavors we get to hold on to long after jet lag passes, and this trip did not disappoint!

All of our hosts recommendations were delicious, so when it came time for dessert, we were more than open to recommendations, and WOW, I’m glad we listened to that suggestion – Spicy Orange Coconut Chocolate Panna Cotta.

I’ve since tried recreating this exquisite dessert, which still eludes me, but I repurposed the flavor profile for a more practical daily use – overnight oats. Mid-week is an early rise for some of us, so I make these overnight oats as a busy morning and a breakfast-on-the-go every week. Fast, simple, and budget friendly with a decadent flavor!

It’s like a dessert, treat, and breakfast all in one, AND it lasts in the fridge for a good few days!

Ingredients:
  • 1 1/2 cups oat milk
  • 1 + tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp Greek yogurt (or skip for vegan version)
  • orange zest of one medium orange + some juice
  • 1 tbsp chia seeds
  • 1 tbsp cocoa powder
  • 1 cup rolled oats
  • a sprinkle of cayenne pepper.
Directions:

Mix all wet ingredients, orange zest, and cocoa powder until well combined. Taste the liquid and adjust any proportions to taste. Mix in rolled oats, cover with cling wrap and leave for at least 3-4h, overnight is best.

Top with anything- frozen fruit, nut butters, nuts, granola. Our go to toppings are peanut butter & frozen cherries!
